It was the first day of school yesterday and I promised my girls their favorite meal…homemade chicken nuggets. Of course I didn’t realize I was out of bread crumbs so I had to improvise and this is what I came up with…
- 3- 4 boneless skinless chicken breasts cut into 1-2 inch cubes or fingers
- olive oil- few tbl/enough to coat the chicken
- usually bread crumbs 1/2 cup – today a mixture of crushed bran flakes and ground flax seeds
- parmesan cheese- few tbl
- chia seeds-few tbl
- ground pepper- to taste
Toss the chicken breasts in olive oil and then coat with a mixture of the dried ingredients, bake on a cookie sheet @350 for about 25 mins turning half way through.
The new coating was a hit. My favorite part is always the addition of chia seeds to the coating, it adds a really nice crunch and of course loads of extra nutrients. Enjoy!!
