Healthy Chocolate Chip Cookies
So what makes them healthy you ask? Chickpeas. A few years back I received “Deceptively Delicious” by Jessica Seinfeld as a gift and have since found ways to hide veggies/fruits/beans etc in my meals.
The book has many wonderfully deceptive recipes and though I like my children to try foods as a whole (i.e. not hidden in their meals) I also like to squeeze in extra goodness when I can.
I’ve altered the original recipe to suit my needs and it is as follows;
- few tbl of maple syrup or honey
- 1/2 cup butter
- 2 eggs
- 2 tsp vanilla
- 15 oz can of chick peas
- 1 1/2 cup chocolate chips (though 1 cup would be plenty)
- 2 cups wholewheat flour
- 1/2 cup old fashion oats
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cups raisins, nuts (optional)
preheat oven to 350F
blend the honey, butter, eggs, vanilla, chick peas
combine the dry ingredients in a bowl
add the wet to the dry, fold in the chocolate chips, use your hands to form a dough if needed
drop a tablespoonful of dough on a cookie sheet (greased depending on the type), flatten with a fork and bake about 11-13 mins.
