Sweet Potato Pancake

Pancakes are a favorite around my home and so today I made a batch of sweet potato pancakes for my day care lunch.

Over the years I’ve added a few recipes together and have come up with this;

  • 2 cups flour
  • 1 cup milk
  • 1 cup sweet potato puree (or squash, pumpkin, or 1/2 cup beet)
  • 2 eggs
  • 1/4 veg oil
  • 1 Tbl baking powder
  • 1 Tbl sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt

put it all in a container with a tight lid and shake till mixed and no clumps, heat up a pan to med heat, add enough oil to coat pan

laddle a few pancakes into the pan, after they start to bubble and are brown on the under side flip, wait another minute or two and done


I usually make a double batch and freeze three or four pancakes per bag, they make a fast breakfast for the girls before school (just toss in the toaster oven)

Ideas for Toppings/Sides

  • apple sauce
  • yoghurt
  • cottage cheese
  • nut butters/ jam
  • maple syrup/honey
